Blueberry Banana Muffins

 

“I like them!” – my 4 year old daughter

These blueberry banana muffins are really easy to make and delicious to eat. We are using almond flour for the extra protein, but you can use any type of flour that you like. Eat them warm with a little peanut butter in the middle…so good!

Blueberry Banana Muffins

Prep Time: 10 minutes

Cook Time: 30 Minutes

  • ¼ cup honey
  • 2 eggs
  • 2 medium bananas
  • 3 tbs. olive oil
  • 3/4 tsp. baking soda
  • 2 1/2 c. almond flour or almond meal
  • 1/2 tsp. sea salt
  • 1 c. blueberries, fresh or frozen

Preheat oven to 310ºF. Grease or line a muffin tin.
Smash the bananas in a bowl.
Whisk the honey, olive oil, eggs, and bananas in one bowl.
In another bowl, mix the dry ingredients.
Add dry ingredients to wet ingredients, and mix well.
Stir in blueberries.
Put batter into muffin cups.
Bake for 30 minutes, check with a toothpick to make sure they are cooked through. Enjoy!!

Try these healthy banana blueberry muffins with hot coffee on a pretty fall morning! Every mom’s dream! We like to slice them open and add a little peanut butter!
Ingredients
