Easy Pumpkin Muffins

Need a quick, healthy treat for your kids – or yourself?! Try our recipe for easy pumpkin muffins!

  • 2 1/4 c. almond flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. sea salt
  • 1 1/2 tsp. spice, pumpkin pie
  • 3/4 c. honey, raw
  • 2 tsp. coconut oil, raw, or olive oil (extra-virgin)
  • 1 egg
  • 1 c. pumpkin puree
  • 1 c. chocolate chips, dark (preferably)

Heat oven to 350°F. Grease or line muffin tins.

In a large bowl, combine dry ingredients (almond flour, pumpkin pie spice, baking powder, baking soda, and salt) and mix well. In another bowl, combine honey, coconut oil, pumpkin, and egg. Mix well. Add dry ingredients into wet ingredients, and stir until combined. Add in the chocolate chips.

Fill muffin tins about 2/3 full. Bake for about 25 minutes or until somewhat firm to the touch. We like to wait until the tops are a touch crusty! Enjoy!
